At Camp Caribbean, the dishes celebrate the vibrant culinary traditions of the Caribbean, brought to life by the expertise of Chef Ricardo Allen.
A native of Jamaica, Chef Ricardo’s journey began in his grandmother’s kitchen, where his love for cooking took root. Over the years, his passion and talent have earned him numerous accolades, including the prestigious title of Taste of Jamaica Chef of the Year in 2016, solidifying his reputation as a master of authentic Caribbean cuisine. Among those who have had the privilege of enjoying his creations are public figures such as King Charles and Snoop Dogg.
We were happy to see him in the kitchen during our visit, preparing our meals personally alongside his team.
A Taste Of Delicious Caribbean Fare At Camp Caribbean
This was our first time trying Jamaican food, and we were excited to find an authentic experience right here in Singapore.
We started with the Jam Rock Platter, a selection for two that featured Jerk Chicken, Jerk Stingray, and Jerk BBQ Pork Ribs, served with rice and beans, coleslaw, fried plantain, and corn ribs.
Jerk Chicken & More in Singapore
Jerk chicken, a Caribbean classic, is known for its smoky, spicy flavours. Marinated in a blend of spices and grilled over pimento wood, it’s packed with bold, aromatic taste.
This was one of the standout meats, with its smoky depth and juiciness. Each bite paired perfectly with the fried plantains, which added a lovely hint of sweetness.
The Jerk Stingray, marinated for 24 hours and smoked on the grill, was another highlight, especially when paired with the refreshing pineapple salsa. We really liked how well-cooked it was and how tender and sweet the flesh of the stingray was.
The Jerk BBQ Pork Ribs were tender and fall-off-the-bone, coated in a smoky barbecue glaze. The portion sizes of this platter were satisfying, and it’s definitely worth trying when visiting Camp Caribbean in a group.
Next, we sampled the Curried Goat, a Trinidadian dish with slow-cooked goat meat in a rich curry sauce. Served with rice and beans and a side of coleslaw, it was hearty and full of flavour. The chilli sauce was also complimented for adding an extra kick of heat and tang.
To round out our meal, we got the Rock Steady Mac & Cheese, which gave a unique twist to this childhood classic.
Creamy, yet not too cloying like many mac and cheeses, it was perfectly balanced with smoked cheddar, coconut milk, and a blend of herbs and spices.
We couldn’t stop eating it, right down to the last bite, and the crispy crust was particularly satisfying. This dish was a hit at our table.
Refreshing Caribbean Drinks
A meal at Camp Caribbean wouldn’t be complete without a drink. One highlight is the Sorrelade Punch, available in non-alcoholic and alcoholic versions with rum.
Made from hibiscus and warming spices, this drink embodies the festive spirit of the Caribbean and pairs well with the robust flavours of the dishes. This reminded us a little of mulled wine but we think it’s enjoyable year round.

Camp Caribbean offers a refreshing escape with its authentic Caribbean flavours and relaxed vibe, making it a great spot for a laid-back meal with friends or family. We enjoyed the dishes packed with flavour and creativity. We also really appreciate that this place is suitable for furry companions. If you’re looking to try something different for an upcoming meal, this cozy spot in Kampong Bugis is definitely worth a visit.
