Cavern Restaurant, at Rainforest Wild Asia, is the latest dining concept by Singapore’s restaurant group Tunglok Group. Known for their award-winning establishments across the region such as TungLok Signatures, TungLok Seafood and QIN Restaurant and Bar, this latest dining concept is unlike any of their usual restaurants, and is located within a cave at Mandai Wildlife Reserve’s newest attraction.

Located near the entrance of Rainforest Wild Asia, Cavern Restaurant is situated within a cave system that was inspired by the Mulu Caves of Sarawak, a UNESCO World Heritage site and one of the largest and most intricate cave systems in Southeast Asia.

With a seating capacity of up to 150 guests, the restaurant sports crystalline lights that mirror natural cave droplets. The captivating ambience offers a charming dining experience for every occasion – from intimate date nights, family gatherings and adventurous culinary outings with friends.

 

 


Special Cavern Restaurant Menu Serving up Western Fare Curated by Head Chef Sheng Lim

With a specially curated menu by Head Chef Sheng Lim, whose culinary credentials span across a decade from JAAN, CURE Concepts and CÉ LA VI Singapore, Cavern offers a blend of International Western flavours in their menu offerings.

The menu includes starters like the Pulled Pork Taco ($22), which has pulled pork cooked over 12 hours before being served in a soft-shell taco with paprika aioli on top.

Another offering is the Crystal Cave Salad ($22), featuring a mix of red and golden beetroot, with a generous portion of Spanish burrata sitting on top, drizzled with truffle honey and crunchy walnuts for texture.

Other mains include the Grilled Octopus Skewer ($22), using sustainably sourced octopus cooked to perfection before being served with chimichurri sauce.

 

 

Some exciting mains offered include the Stone Age Burger ($20) that features a juicy grilled beef patty served between a fluffy potato bun alongside thick-cut fries and tangy pickles.

Another item, the Caveman’s Meat Skewer ($38) serves up a Great Southern Tenderloin, pierced together with shallots, padron peppers and button mushrooms.

One of the key highlight dishes include the Ironstrike Knuckle ($28) which is a 500 gram pork knuckle braised over 12 hours in a blend of Chinese spices, dark soy sauce, five spice, cardamom and bay leaves, and served in a homemade mustard sauce.

The menu also offers desserts, such as the Balinese Dark Chocolate Tart ($18). It uses 75% dark chocolate, toffee and a savoury cookie crumb base, with a dollop of chantilly cream on the side.

Not to mention, Cavern restaurant has a bar that serves up a variety of beverages from coffee, artisanal tea, juices and even alcoholic refreshments like beer and cocktails. Some exclusive drinks include the ‘Sng Buey’ Lime Margarita ($18), a twist on the cocktail classic with agave spirit, fresh lime juice and lime liqueur. The Mango Coconut Splice ($22) refreshes with notes of creamy coconut and sweet mango, delivering a perfect balance of richness and tang.

We tried a selection of dishes offered at Cavern Restaurant, and here are some of the highlights that we think are worth trying.

We started out with the Stone Hearth Loaf for appetisers, which is a homemade sourdough loaf served with a homemade butter dip with spring onion oil. The sourdough had a crispy crust and a soft and chewy inside, which paired well with the savoury butter dip.

Emerald Canopy

The Emerald Canopy was also a surprising delight, which had individual quarters of romaine lettuce layered with green goddess dressing and topped with radish. Contrary to usual salads, this dish crystallised the best flavour of salad in mess-free bite sized pieces.

 

 

Forest Mushroom

Forest Mushroom is also a delightful dish that uses brown and white button mushrooms cooked and reduced to a thick sauce, bringing out the mushroom’s deep flavours. I would suggest to pair the dish with fries or sourdough bread, to balance out the rich flavour.

Ironstrike Knuckle

A dish that is definitely not to be missed is the Ironstrike Knuckle, which is served intact with the bone and a knife stuck within. The meat is extremely soft and juicy, falling off the bone easily. Pair it with the mustard sauce for a richer flavour.

Caveman's Meat Skewer

The Caveman’s Meat Skewer is my personal favourite, with 200 grams of beef tenderloin hanging on a skewer, cooked to medium rare perfection. Paired with the chimichurri sauce, it helps to bring out the fragrance of the meat, making every bite extremely scrumptious.

Balinese Dark Chocolate Tart

To round off the meal, try the Balinese Dark Chocolate Tart, which is extremely rich with hints of toffee in every bite. The whipped chantilly helps to balance out the rich chocolate flavours in the tart.

Cavern Restaurant is open to the public for visiting without a park entry ticket. Open daily for lunch and dinner, the restaurant also features a dedicated bar and is an ideal destination for casual dining and gatherings, and are open for both corporate functions and private celebrations.
