Easy Ground Beef Bibimbap Recipe

Bibimbap is another well-known Korean dish and comfort food! With this Ground Beef Bibimbap recipe, just mix a variety of veggies, ground beef and rice with a delicious bibimbap sauce and your dinner will be ready in no time. If you have tried this Korean Japchae recipe, you are literally using the same ingredients, except that the base for this is rice. I am sure this will quickly become your family favourite too!

Recipe for Ground Beef Bibimbap

Servings: 3 to 4 people

Ingredients

Meat and meat sauce:

  • 100 grams of ground beef
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sesame oil
  • 1 teaspoon of sugar/ honey
  • 1/4 teaspoon of minced garlic

  • 1/2 large-sized carrot, julienned
  • 1 sweet bell pepper, julienned
  • 350 grams of spinach (1 large bunch), cleaned well
  • 1 large-sized zucchini, julienned
  • 10 white button mushrooms (or shiitake mushroom), sliced 
  • 4 portions of cooked rice (brown rice was used here)
  • 4 fried eggs (optional)
  • 1 tablespoon of sesame oil
  • 1 tablespoon of sesame seeds
  • Salt
  • Cooking oil

Bibimbap Sauce:

  • 2 tablespoons of gochujang (Korean red chilli paste)
  • 1 tablespoon of sesame oil
  • 1 tablespoon of sugar/honey
  • 1 tablespoon water
  • 1 tablespoon of roasted sesame seeds
  • 1 teaspoon of vinegar (I used apple vinegar)

Method

  1. Combine all the ingredients for the minced beef in a bowl. Marinate for 20 minutes while preparing the other ingredients.
  2. Add some cooking oil into a wok and cook the meat on medium-high to high heat. It takes about 3 to 5 mins to thoroughly cook it. Dish out and keep warm.
  3. Mix the Bibimbap sauce in a bowl and set aside.
  4. Heat up a skillet to medium-high heat. Add 1 teaspoon of oil and the sliced zucchini. Season with salt and saute for 2 minutes. Do not overcook, just dish out to a plate when it is softened.
  5. Add 1 teaspoon of oil to the same skillet with sliced mushrooms and a pinch of salt, saute for 2 to 3 minutes. Dish out.
  6. Add 1 teaspoon oil and bell peppers to the skillet with a pinch of salt.
  7. Saute for 1 minute and dish out. Add 1 teaspoon of oil, carrots and salt to the pan. Saute for 2 minutes and dish out.
  8. Bring a large pot of water to boil. Add a generous amount of salt to the water. Add spinach and cook for 10 seconds. Remove the cooked spinach to a big bowl of cold water to stop it from further cooking. Squeeze out water from spinach gently. Add 1 TBSP of sesame oil and sesame seeds and mix well. Set aside.
  9. Time to assemble the dish. Scoop a portion of rice to a dish or bowl. Arranged 1/4 portions of all veggies & beef around the rice. Put the fried egg on top of rice. Apply the desired amount of sauce and mix all the veggies, meat and rice together. Enjoy!
