
Pullman Singapore Hill Street is collaborating with Old Chang Kee to bring sweet and savoury classics ahead of Singapore’s SG60 celebrations till 30 April.
Available at the hotel’s all-day dining venue, Madison’s is a restaurant that is largely inspired by New York’s neighbourhood deli. The collaboration features an afternoon tea set that is a fusion of traditional Singaporean flavours and contemporary culinary presentation style.

Diners can choose from 13 Premium Silver Jubilee Tea Selections by Dilmah, including unique offerings such as the Pullman Signature Tea and Blood Orange & Eucalyptus, or classic flavours such as Earl Grey and Breakfast Tea. Other beverages include the Nespresso’s Kopi C or regular coffee and tea.
The sweet fun section includes desserts such as the Ondeh Ondeh cake, Gula Melaka mousse with Mango Jelly, Mango pudding with Sago Pomelo and Pandan scones served with Kaya and Whipped cream. Not to mention, Black Sesame roll, Yuzu Macaron and assorted Chocolate Pralines are available as well.
In the sidewalk savouries section, beloved Old Chang Kee classics such as the Curry Potato Puff and Sardine Puff, a take on Curry’O and Sardine’O are included, promising a burst of flavour with every bite. Other treats include the Confit Chicken Brioche with Chili Mayo, Mini Pullman Style Rojak and a luxurious Laksa Shrimp Vol Au Vent topped with 8 Gems Caviar.
Trying Out The Madison’s x Old Chang Kee Afternoon Tea Special
We were amazed by the wide selection of teas, and decided to try the signature Pullman tea and the Blood Orange & Eucalyptus flavours. When the pot of tea is served, there is a special timer available to use if you would like to count the perfect duration to steep your tea before enjoying them.
Starting off with the sidewalk savouries, we can’t go wrong with the Old Chang Kee classic flavours. Contrary to the usual size of the Curry’O and Sardine’O, each puff finishes in 2 bites, leaving us wanting for more. The Mini Pullman Style Rojak is an interesting snack, as it has all the flavours of the rojak packed into one bite – specifically my favourite part, the fried dough fritters. The Chicken Brioche with Chilli Mayo was delicious, pairing the soft bread with the rich filling of spicy chicken. The most exquisite snack of them all, the Laksa Shrimp Vol Au Vent was delightful, although the laksa paste overpowered the taste of the 8 gem caviar.
Moving on to the sweet fun section, majority of the selections were super bite-sized that we were able to easily pop them into our mouths. Our favourites include the Ondeh Ondeh cake and Sweet Potato Mousse, which were both dome-shaped and had great flavour that brought out its core ingredient. The Black Sesame Roll, and Gula Melaka Mousse with Mango Jelly were both light and mildly sweet.
As sweet treats made up most of the afternoon tea selection, the assorted chocolate pralines and yuzu macaron ended up being too sweet for our palate, although the tea helps to neutralise the taste buds.

The afternoon tea set is beautifully displayed in an embossed leather case, reminiscent of the vintage traveller look that resonates with Pullman’s brand and Dilmah’s vintage heritage. The fine china tableware are also custom designed for the collaboration, bringing together the colours of Madison’s and Dilmah.
