The sautéed Bird’s nest with Egg White is a festive take on Prima Tower Revolving Restaurant’s signature Shredded Scallops with Fish & White Egg or “赛螃蟹”, which directly translates to “Compete with Crab”. The story behind this dish was that it was made to satisfy the emperor’s cravings for crab in the periods where crabs were “out of season”. We enjoyed this flavourful dish with its thick chunky gravy.
Prima Tower Revolving Restaurant Chinese New Year 2020 Menu includes the Fortune Pot in Peking Style. Promised as the highlight of any reunion dinner table meal, it was candidly praised by others at our table as the “best pencai they’ve had”. This dish was overflowing with auspicious delicacies such as abalones, sea cucumber, dried oysters and so much more. Do note that the original dish contains sharks fin, and I highly recommend and encourage calling the restaurant in advance to switch the sharks fin to fish maw for an equally tasty yet more ethical meal.
The Braised Fresh Scallop with Water Chestnut in Chilli Sauce is another seafood dish worth having. The scallops are pan-fried till brown and braised in a sweet spicy sauce. The added chestnuts symbolically represent specks of gold, and the preparation of it allowed the scallops to keep their chewy texture.
The Braised Pig’s Trotters with Fish Maw & Fatt Choy in Claypot is a classic dish that literally translates to “Fortune leaks into your hand”. Cooked with black sea moss, the pork was super tender and perfect on top of any bowl of white rice.
Our favourite dish of the media tasting was the Candied Mashed Potato with Rice Pudding. The mashed potato wrapped in red dates is tossed in caramel and cooked to get a golden crispy outer shell. The rice pudding also came in a really pretty shape of a butterfly.
