It’s as easy as A-B-C and full of the goodness of Vitamins A, B and C. No, we’re not referring to the commonly-known ABC juice (Apple, Beetroot, Carrot juice) you can order from hawker centres. It’s ABC Soup from a good healthy chicken stock base, comprising carrot, potatoes and tomatoes.
First off, we have Vitamin A from beta-carotene found in carrots, which also contain a good source of several other vitamins. Vitamin B & C are loaded in potatoes, which are surprisingly also low in calories. Then we have a rich source of Vitamin C and antioxidants from tomatoes.
Let the kids practise their fine motor skills by skinning the carrot and potatoes with a kitchen peeler then chopping all of these up into big chunky pieces.
With chicken within the soup, this becomes another great one-pot meal as well.

Recipe for ABC Soup
Ingredients
- 2 big chicken breasts, remove skin and cut into 4 halves
- 1 carrot
- 2 big potatoes
- 4 tomatoes
- 3 medium size onions (yellow skin)
- 2 litres of water
Method
- Put water in a pot to boil.
- When boiled add all of the above ingredients.
- Wait for it to boil again then lower the fire to continue cooking for one and a half hours
- Put salt to taste and serve in bowls.
Good for a family of four.
